  1. Fideo grueso sin gluten, yo utilizo el de la marca "Gallo"
  2. Caldo casero de pescado, marisco y verduras
  3. 1 cebolla
  4. 4 dientes ajo
  5. perejil picado
  6. tomate triturado
  7. AOVE, pimentón dulce, sal
  8. 200 grs. calamares
  9. 200 gr. sepia
  10. 10 Gambones

Instructions to make to make Fideuá sin gluten

  1. En mi caso, preparo gran cantidad de caldo casero de pescado, marisco y verdura y congelo en recipientes de 3 litros aproximadamente, para que el procesono no sea tan largo, también puedes utilizar caldo de brick.
  2. Para esta paella que es de doce raciones, utilizo como unidad de medida un vaso de sidra, del cual prepararemos 2 vasos de fideos y 5 vasos de caldo, reservamos.
  3. Cortamos la sepia y los calamares en trozos y reservamos.
  4. Picamos los ajos y el perejil, hacemos un majado con aceite de oliva y reservamos.
  5. Picamos la cebolla y reservamos.
  6. Trituramos un tomate pequeño, o unas 5/6 cucharadas soperas de tomate triturado de lata. Reservamos.
  7. Encendemos la paella y echamos el majado de ajo y perejil, en el que salteamos los gambones y retiramos.
  8. Echamos la cebolla y la doramos junto con los calamares y la sepia.
  9. Echamos el tomate triturado y lo cocinamos unos minutos.
  10. Echamos los fideos, dos o tres cucharadas de café de pimentón dulce y sofreímos todo sin parar de remover, uno o dos minutos.
  11. Con el fuego al máximo, incorporamos el caldo, reservando un vaso por si hubiera que añadir al final, y una vez que rompa a hervir, lo dejamos unos 8 minutos al máximo de potencia. Añadimos la sal al gusto.
  12. Bajamos el fuego casi al mínimo, que siga la cocción unos 10 o 12 minutos más, hasta que los fideos estén cocidos. Sobre el minuto 13/14 incorporamos los gambones superficialmente para que terminen de hacerse.
  13. Pasado este tiempo, comprobamos que los fideos estén bien hechos por si hubiese que añadir algo de caldo, de ser así, se lo echamos poco a poco. Apagamos el fuego y tapamos unos cinco minutos. A disfrutar 😉.
