  1. Pon a calentar a fuego medio 3 cucharadas soperas de AOVE de Jaén.

    Un poco de Sal.
    Dos dientes de Ajo.
    Májalo hasta que forme una pasta sin fibras.
  6. Termina el majado con una cucharada de postre de perejil picado y 100 ml de vino blanco.
  7. Una vez hecho el sofrito, sácalo en un vaso batidor y tritura con 400 ml de Agua o caldo de Pollo si lo prefieres.
  8. Echa un poco más de AOVE de Jaén en la paellera a fuego fuerte. Pon el Pollo a marcar.
  9. Cuando el Pollo esté marcado introduce la pasta y espera un minuto para que se tueste.
    Remueve.
  10. Baja a fuego medio y echa el majado en la paellera. espera a que se evapore el alcohol.
  11. Pasa el sofrito triturado por un chino o colador (quedara más fino) e incorpora a la paellera junto con un puñado de guisantes. Prueba el caldo y corrige de Sal.
    Deja que haga chup, chup unos 10 minutos o hasta que alcance la textura de la pasta deseada.
