  2. 3 chorizos
  3. 2 morcillas
  4. 250 gr. panceta
  5. 200 gr. lacón
  6. Azafrán

  1. Dejamos en abundante agua las fabas desde la noche anterior.
  2. Escurrimos el agua y ponemos las fabas en una cazuela ancha y las cubrimos con agua hasta sobrepasar dos centímetros. Llevamos a ebullición a fuego fuerte. Transcurridos 5 minutos sacamos la espuma que hayan soltado las fabas y bajamos el fuego casi al mínimo. Incorporamos toda la carne menos el lacón y tapamos.
  3. A los 30 minutos sacamos la grasa que está soltando el chorizo y 30 minutos más tarde ponemos un poco de agua fría para cortar la ebullición e incorporamos el lacón y el azafrán.
  4. 30 minutos más tarde ponemos otro poquito de agua fría y ya dejamos hirviendo tapado hasta completar las 2h y media desde el principio.
  5. IMPORTANTE dejar reposar a nuestra fabada y si es de un día para otro muuuuuuuucho mejor.
