- Pasamos a una manga y sobre una charola con papel encerado haremos palitos o rectangulitos de 6 a 8 cm de largo


- Les agregamos azúcar glass encima y llevamos a hornear por 10 minutos a 180 grados


- Mientras se hornean las soletas, vamos a poner a hervir agua con el azúcar y el café


- La crema la vamos a batir a puntos de picos suaves y vamos a refrigerar


- Nuestro queso lo vamos a dejar afuera del refrigerador para que esté a temperatura ambiente y sea más fácil de ponerlo a punto de pomada
- Nuestras yemas las vamos a batir a punto de listón y mientras tanto vamos a poner a hervir nuestros 100 g de azúcar con los 45 ml de agua


- Una vez que luestra azúcar esté en este estado vamos a tomar un poco con una cuchara y la meteré os en agua fría, y si se hacen estas pequeñas bolitas suaves está listo para usarse



- Lo vamos a agregar a nuestro huevo sin dejar de batir y poco después agregamos la grenetina

- Como dato, vamos a hidratar la grenetina con 3 cucharadas de agua por cada una de grenetina dejamos que cuaje y después se lleva al microondas o a baño maría para derretirlo
- Una vez uncorporado vamos a agregar el licor de café y mezclamos nuevamente

- Ahora vamos a agregar esta mezcla al queso, incorporamos


- Ahora vamos a agregar la crema batida previamente y volvemos a incorporar


- Del paso 10 al 16 se tiene que hacer rápidamente, pues la grenetina y azúcar se endurecen
- Ahora llegó el momento del armado

- Vamos a humedecer nuestras soletas en el café y colocamos en un refractario



- Colocamos una capa de nuestra mezcla de crema y colocamos otra capa de soletas


- Colocamos la última capa y aplanamos con una pala y agregamos cocoa en la parte superior


- Refrigeramos por mínimo 2 horas
