- En el segundo bowl introducir las claras y el azúcar restante y batir a punto nieve. Podemos incorporar una pizca de sal para que no se bajen.

- Una vez listas estas dos mezcla; poner la primera crema en el bowl de las claras, mezclar con una cuchara de palo para que no se baje la mezcla, con movimientos circulares muy lentos hasta conseguir una mezcla homogénea.

- Agarrar una bandeja en donde montaremos el tiramisú. Mojar poco a poco cada vainilla en el café, como unos 3 segundos como mucho ya que se mojan muy rápido y colocarlos en fila hasta cubrir el fondo. Una vez obtenida la primera capa, cubrir con la crema de mascarpone seguidamente espolvoreamos una pequeñas capa de cacao amargo. Repetir este paso hasta cubrir la bandeja.

- Llevar a la heladera como mínimo unas 3/4 hrs. Listo!!
