  1. 500 gr fabes
  2. 2 chorizos
  3. 2 morcillas
  4. 200 gr tocino
  5. 5-6 hebras de azafrán
  6. Hoja laurel
  7. sofrito básico
  8. 1/2 cebolla
  9. 1/4 pimiento rojo
  10. 1/2 c.c. pimentón de La Vera
  11. 20 ml vino blanco
  12. 1 tomate maduro

Steps to make to make Fabada

  1. Ponemos el día anterior las fabes con el tocino a remojo.
  2. Primero hacemos el sofrito básico. Picamos la cebolla y el pimiento rojo en brunoise y los pochamos con un poco de aceite. Añadimos el pimentón, dos vueltas para que no se queme y seguidamente el vino blanco y el tomate triturado y dejamos cocer hasta que se elimine el agua de vegetación. Sacamos del fuego, trituramos bien, colamos y reservamos.
  3. En una olla ponemos a cocer las fabes y el tocino con agua nueva y desde frío con la hoja de laurel. Cubrimos con agua unos 2 cm sobre las fabes. Cuando rompa a hervir, bajamos a fuego muy suave para conseguir un chup chup constante pero suave. Así evitamos que se muevan mucho y no se rompa.
  4. En un cazo aparte, cocemos los chorizos y la morcilla durante 10 - 15 minutos. Retiramos del fuego y dejamos enfriar dentro del cazo. Reservamos.
  5. Vamos comprabando la cocción de las fabes pero sin remover, sino moviendo la olla. Podemos añadir agua fría si vemos que se va consumiendo.
  6. Cuando lleve unos 30 minutos añadimos las hebras de azafrán.
  7. Los últimos 10 minutos de cocción, añadiremos un par de cucharadas de sofrito reservado y dejamos que se ligue bien
  8. Sacamos el tocino. Lo cortamos en trozos de bocado y los volvemos a añadir junto con los chorizos y la morcilla también cortados.
  9. Dejamos cocer esos 10 minutos y retiramos del fuego.
  10. Es mejor dejarlo reposar unas horas y volverlo a regenerar a la hora de comer.
