  4. Incorporamos el sabayón poco a poco al queso mascarpone removiendo para que no haga grumos
  5. Luego lo mezclamos todo en el siguiente orden. La mezcla anterior la mezclamos con la nata con movimientos suaves y envolventes. Luego sobre esta mezcla ponemos un poco de las claras montadas y mezclamos suave y envolvente. Ahora todo el resto de las claras montadas sobre lo anterior y seguimos envolviendo suave
  6. Mojamos ahora los bizcochos de soletilla (melindros, savoiardi) en café y cubrimos el fondo de la bandeja.
  7. Volcamos la mitad de la crema
  8. Y ponemos otra capa de melindros encima
  9. Y volvemos a cubrir con la crema restante
  10. Metemos en la nevera toda la noche
  11. Espolvoreamos cacao por encima
  12. ..... y a disfrutar
