- Empezamos haciendo el bizcocho: Separamos las yemas de las claras Montamos las claras y las guardamos en la nevera
- Montamos las yemas con el azúcar hasta que doblen el tamaño, y añadimos los 20 ml de café mezclamos ahora añadimos la harina y la almendra en forma envolvente hasta conseguir una crema uniforme y de forma envolvente también añadimos las claras montadas
- Horneamos a 200ºc unos 8 minutos o hasta que lo veamos ligeramente dorado. Dejamos enfriar
- Cuando este frío lo calamos con el almíbar y reservamos
- Mousse de tiramisú: hacemos un almíbar con los 90 gr de azúcar y 45 ml de agua, en los 25 ml de leche disolvemos la gelatina que previamente hemos hidratado y escurrido y se la añadimos al almíbar
- Batimos las yemas y le agregamos el almíbar hasta que doblen el volumen
- Montamos el queso mascarpone con la nata. Cuando la crema de yemas esté templada la añadimos a la nata y el mascarpone que hemos montado la añadimos en forma envolvente ahora le añadimos el chocolate picado fino
- Sacamos el molde y echamos sobre el bizcocho la mousse de mascarpone y dejamos en la nevera unas 4 horas
- Lo emplatamos y espolvoreamos con el chocolate picado fino y ponemos unos rosetones de nata montada con café soluble y unos granos de café. Espero que les guste
